Perfect breakfast...

A close friend recently sent me a recipe for what she called "deliciousness pancakes," and of course, with my love of anything pancake-like, I had to try them, stat. Lo and behold, they have quickly become a staple in our early morning weekend routine, and I wanted to share the recipe for you to enjoy, too! Not only are they tasty, but that are a nutrition-packed, completely balanced meal, and a fantastic way to start your day. Oh, and they are sooooo easy to make!

*as always, use organic ingredients whenever possible - especially when it comes to dairy & eggs

batter:

1 cup oats (dry)

1/2 cup lowfat cottage cheese

2 eggs

1 tsp vanilla

*mix in blender until you see a batter form (about 20-40 sec)
*once blended, add fresh or frozen blueberries - carefully stir into batter
*use non-stick cooking spray in large pan & spoon batter onto (just like traditional pancakes)
*cook on medium heat about 4-5 min each side (when batter starts bubbling, time to flip)

topping:

1 cup lowfat plain Greek yogurt

1 tbsp 100% maple syrup

*mix with spoon







(the pancakes above show how they look without the healthy yogurt topping...)

Add fresh berries and bananas if you'd like...generously spoon the yogurt topping onto pancakes & you have super nutritious, super yummy & super balanced breakfast! Enjoy with a mimosa and you really have a great way to start your day :)
